What’s for Christmas dinner, peeps? When I was a kid, my dad required Christmas dinner to be a second round of Thanksgiving dinner. All the starches and sugars. Mom would spend all day in the kitchen for that; I refuse to be like that. Some years I’ve actually just thrown a roast in the crockpot for Christmas dinner. I want to enjoy Christmas, not spend the day at the stove. So… For four people, I made 3 racks of lamb, some green beans (sautéed in bacon fat with shallots and mushrooms), mashed potatoes, and freshly-toasted baguettes. The lamb was prepped via sous vide on Friday; all I had to do was finish it on the grill today. The starchy things were for people who are not me. I ate 5 lamb chops, a small amount of green beans, and a pat of Kerrygold butter. And I had a glass of red wine.
