Over the last two years of low-carb living, I will say my biggest tool is ground beef and hardboiled eggs. I know … sounds funny, but it truly is ground beef and eggs. I love them and it never gets old. Knowing I have a stash of cooked ground beef in the chest freezer is a comfort to me. Knowing I have hardboiled eggs ready at all times is a comfort to me. It takes the guess work out of meal planning. I know that in a matter of minutes, I could have a bowl of either “taco” salad, burger in a bowl, pizza in a bowl, etc., with virtually zero overthinking and clean up. When everyone else is having what they are having, I can make it into a bowl. When I first started low-carb, I definitely experienced keto confusion. So much infotainment out there. It doesn’t have to be complicated and that was a huge lesson for me. This is how I protect myself. I make sure I always have a versatile protein cooked and we keep track of it all on a freezer list (also a comfort). Ground beef salad with 3 hardboiled eggs and home-canned SF salsa … chef’s kiss. (I always call it taco salad, but it should be seasoned ground beef salad.)
