Traveled up to Northern California to my youngest daughter’s house for Thanksgiving so I decided to make some low carb pumpkin bread and some No-banana Banana bread to tote along for myself and to share. Turned out pretty tasty. It was reasonably well received here (not that it really mattered) but I noticed that when I bring low carb foods in it seems like everyone becomes a food detective. Trying to figure out flavors they’re picking up, textures, etc… Lol! I seriously doubt they put that much effort into figuring out Costco’s pumpkin or banana bread! Maybe they should!! I used an allulose/monk fruit blend (Besti brand) as the sweeteners. This was the first time I made it and I will say that next time on the pumpkin bread I’ll be a little more heavy handed on the spices & extract! I used LowCarbLove’s recipes. She had allll the Starbucks remakes and many other good ones too!
