This rainy, chilly weather calls for soup. My freezer stash was gone so I made a double batch. πŸ₯° Smoked Sausage Keto Soup β€”β€”β€”β€”β€”β€”β€”β€”β€”β€”β€”β€”β€”β€”- 1 lb smoked sausage 2 yellow squash 2 zucchini 1 red bell pepper 1 yellow onion 1 can Rotel 1 can diced tomatoes 1/2 bag of baby spinach 1 cup bone broth 8oz cream cheese 1 qt heavy whipping cream Salt, pepper, & Tony’s to taste Brown the smoked sausage and set aside on paper towels to drain. Cut up all veggies and sautΓ© in olive oil until soft. I waited until they were almost finished to put the spinach in. Add back in the sausage. Add rotel & diced tomatoes (including juice), bone broth, & cream cheese. After cream cheese melts add in heavy whipping cream. Simmer on medium-low until the soup thickens.
