I make the same seasoning ratio for each 8 lb half. - I buy the big bag of mandarins at Costco and freeze them until I need them for this recipe. I freeze all my citrus like lemons, limes, mandarins. Just pull out what you need to thaw and plop it in the fridge the night before. - The recipe is for a crockpot. You’ll want it to go low and slow for a long period of time and look for an internal temp of 208-209°F so it shreds easily. The recipe says you can use high for 4-5 hrs, but I like it low and just let it go overnight. - For the crockpot, make sure the shoulder ends up with fat cap up, so the fat renders down into the meat. - I know it looks odd without any liquid in the crockpot except the small amount of juice squeezed out of the oranges, but trust the process. ;-) For the Instant Pot version: - Same seasoning and quantities, but cut the shoulder into large hand-size chunks. Season on all sides. (Last photo) - Add 1-2 cups of broth to the IP, depending on if you have a 6 or 8 quart IP. I have an 8 qt, so I use 2 cups. - 90 minutes high pressure and at least 30 minutes natural release. I usually let it just natural release until I can get to it. 😂 - Let the cooked meat rest on a sheet pan for 30 minutes or so before attempting to shred it. That way, you won’t burn your digits.
