Friday's meal (mid-afternoon-ish) was a couple of venison/beef patties and some bacon. Yesterday I spend the afternoon making a giant vat of soup for "people who are not me". The soup is chicken-based (I cook down rotisserie chicken carcasses to make the broth, and then also use the remaining meat), and I munched a couple of bites of chicken meat while I was cutting it up. Literally just a couple of bites, though. For those who are curious, I will attach a photo of the soup, which involves chicken, kale, white kidney beans, black beans, and roasted corn (and a bunch of seasonings and lesser ingredients). I made up the soup, but I've never tasted it because I'm allergic to corn. Among family and friends, it is a requested favorite. Anyhow, I made about 14 quarts of soup. Then I portioned off several quarts for sharing purposes and several servings to freeze for another time. Then I munched some pork rinds and a prosciutto/mozzarella roltini. That's it. Later last night, I was hungry but found out I couldn't be arsed to actually make anything... AND my husband was giving me grief over pork rinds not being carnivore. I asked him exactly what part of "crispy pig skin" sounds like not carnivore, and he couldn't answer... So I went to bed without dinner. Whatever. This morning I still couldn't be arsed to make food before church, so I left church hungry and still not interested in cooking. The imperfect solution for today's meal? Reuben roll-ups (with a small amount of homemade Russian dressing and Bubbie's sauerkraut - a ferment-sauerkraut, not a vinegar one). I have no idea of the carb count or macros, and I don't care.
