I did the shrimp and "grits" using a combination of riced cauliflower and hemp hearts. The hemp hearts really helped make the cauliflower feel more like grits. I thought I had a bag of riced cauliflower in the freezer. I didnt had tonuse fresh. Then I thought "it's only 4 cups, it will be easier to chop than to deal with pulling out the food processor." I do that all of the time. (Whipping cream is a big one...just a little whisking, no point in pulling out the mixer, then halfway thru my arm is about to fall off and I regret it.) Would be a perfect Lent Friday meal if it were not for the bacon. Good thing I'm not Catholic and just do the seafood on Friday thing out of tradition and habit. Very satisfying meal. My son loved it, though had his fake grits with half real grits. My husband isn't up yet (night shift) but I packed some for him. I'm toying with the idea if not telling him half of his dinner/lunch container as fake grits.
