So stinking proud of myself! Finally figured out the egg wrap enchiladas so they are not mushy mess wraps in a dish!!! - Used the whole egg and cottage cheese wraps from yesterday. Left them in the fridge, uncovered overnight so they would dry out a bit. - Filling: precooked ground beef and onions (already drained), added a can of diced green chilis (drained), some splashes of hot sauce, some flicks of cayenne. - Lightly greased the casserole pan with the butter/towel method just like mom taught me. - No sauce on top … just some shredded pepper jack and cheddar (and dried cilantro for color). Not too much cheese, as you want the wraps to bake a bit. - Baked 350° F for 20 minutes. They held up without being overly crunchy or mushy … perfect! Plus, no torn wraps while I was wrapping! Is it easier to cuddle up with a bowl of ground beef? Sure. Does this remind me of mom and family meals? Yup!
