It makes A TON of shredded meat for the freezer stash and is one of the least expensive cuts of meat. I’ll post the crockpot recipe (or Instant Pot … either works) we use and photos when I make another round of carnitas meat this week. I promise, it is one of those “set it and forget it” procedures. Super duper easy and very flavorful. For the enchiladas, I just made a simple sauce using what we had on hand. It doesn’t look pretty after cooked, but it is tasty. - 1 cup sour cream - 1 7 oz can diced green chilis - Salt and pepper to taste - Dried cilantro or dried oregano - Cayenne for kick Mix. Mix.
