Day 4 of eggs (now eggs and ground beef): Made this #onepot meal in the blink of an eye using the ground beef stash I cooked a few weeks ago. #freezerstash Changes I made: - I did not add the tomatoes. I used some bone broth and hot sauce instead. Worked just fine. - I preheated the cast iron skillet on the stove top and simmered the beef (with the bone broth) until I had small bubbles to reduce some of the stock. - If you don’t have a can of chopped tomatoes, salsa would work, I bet. - I did not make wells for the eggs. I just added them on top of the beef before popping it into the oven and it worked wonderfully. (I cracked each one separately into a small bowl and that made it easy to direct traffic in the cast iron skillet.) - I used pepper-jack because that is what I had on hand. Use what ya have on hand. 👏 - I only baked it for 7 minutes. I wanted runny yolks and it worked!
