When doing meal prep for the week I brought back an old favorite. When I lived in Southern CA several years ago, there was a Mexican restaurant that we went to at least once a week, it was so wonderful! They had a house specialty called chicken villa that was chicken cooked in butter and garlic with mushrooms and jalapeños, usually topped with a mozzarella cheese. I would get that but because I didn’t like chicken, I’d get steak villa or carnitas villa. A few years ago I attempted to Google it but couldn’t find it and just decided to try winging it. I haven’t had it in a year or so and was drooling from the smell as I made it today. Sharing in case anyone needs a new idea that’s really just “some of this” and “some of that.” You can’t really get it wrong as far as I can tell!
