To the super smarty who figured out that cottage cheese makes excellent Alfredo sauce, I salute you!! I had to adapt on the fly because we didn’t have milk on hand, so here is what I did: - 2 cups cottage cheese - 1/2 cup heavy cream - 1/2 cup water (I made milk lol) - 1 cup Parmesan cheese (the pre-shredded stuff from Costco worked just fine) - 1/2 tsp pepper (to taste … all of the seasonings to taste) - Add salt afterrrrrrrr you blend it because Parmesan can sometimes be pretty salty and you don’t want ruin the sauce (looks in the mirror at myself … almost ruined it) - 1 tsp garlic powder - Dried basil, dried oregano, and/or dried Italian seasoning (to taste) - Dash, and I mean a dash/tiny pinch of ground nutmeg (if the sauce tastes like Christmas, too much) Process in a blender or smoothie cup until super smooth. (The parm will melt when you heat the sauce. You want the cottage cheese super smooth.) Heat it on the stove, reducing it until you get the consistency you want. Taste. Season. Taste. Season. Over-reduced it? Whisk in some water. Do not run downstairs to grab a bag of broccoli from the freezer and get side tracked and let the sauce come to a boil. That’s bad. Just simmer it. Bam!! Done!! Made extra chicken, Cajun sausage, and broccoli for freezer meals. We’ll see how the sauce holds up.
