Taco meat prepped for my daily (literally) ground beef “taco” salad and headed to the freezer for storage. My fellow hardboiled egg eater (kiddo) is headed to college on Friday, so I only did 12 eggs. No recipe for the taco meat, but I toss in ground chili powder from our friend’s farm in New Mexico, S/P, oregano, crushed red pepper, chili powder, cumin, etc., … just season to taste. This 12 lbs will last me about two weeks.
