Prepping some lunches for the week. I was missing some of the ingredients for this dish, but since I made it up initially I can deviate and change it up all I want. Originally I used a jar of marinated artichoke hearts, a can of heart of palm, marinated button mushrooms, sundried tomatoes, garlic and a variety of olives. The 2 cans I thought I had of heart of palm, one was actually another can of artichokes and one expired in early 2021. So I left those out. I didn't have the mushrooms or sundried tomatoes. Tossed it all together with a little olive oil, garlic powder and some herbs and roast until the chicken is cooked thru.
