Meal prep for the week done! Eggs, cucumbers in vinegar, polish sausage, burgers, steak strips, cheese, sugar free peach jello, and sugar free vanilla mousse. For those wondering, wouldn’t it be just as easy to cook it each night? For me, no. Some people enjoy cooking but for me it’s a chore and there’s no pleasure other than taking the picture when I’m done! So if I have meat that can be warmed quickly in the microwave or air fryer, quick veggies like sauerkraut, spinach, and salad, and a quick protein boost like eggs, sliced turkey, or cheese to deal with the cranky nibbles, I’m set up for success. If I don’t, I will rationalize ordering or picking up enough food for a family of 4 and eating it for a couple of days, even if it tastes terrible. I also don’t generally have any sweets or desserts, but giving myself a little sweet like jello or mousse makes it feel less like “cutting things out” and more like “eating differently.” One more note for anyone like me who doesn’t like cooking: whenever you have to do something you don’t enjoy, pair it with something you do, like listening to Low Carb MD podcasts! Definitely helps me feel less alone and like part of a community!
