Chocolate Goat Cheese Truffles. I can’t control myself with keto treats, but these I can control. @Susan Eiler and @linderwats here my (sort of) recipe adapted to be low carb from the original recipe here: https://www.cheesesexdeath.com/blog/dark-chocolate-goat-cheese-truffles?format=amp Here’s how I make mine with no sweetener or some low carb sweetener. You can also make these without the nut butter, cinnamon and cardamom, just increase the vanilla. I’ve also added a pinch of chili powder instead of the other two spices to get a Mexican chocolate vibe. Another option is to add a bit of lemon or orange zest instead of the nut butter and spices. I’m sure you could also add coconut, almond, or peppermint extract. Adding a little bit of melted coconut oil if you are going for a fat bomb type of creamier, higher fat option. 6 oz fresh chevre (goat cheese) 2 TBS unsweetened high quality coca powder (or 1.5 oz of melted unsweetened chocolate) 1 TBS raw almond butter Pinch salt (I use Redmonds) 1/2 tsp cinnamon 1 tsp cardamom 1/2 tsp vanilla Blend all of the above together (I just do it by hand but you can use a mixer or food processor) Cool in fridge and then form balls and roll in coca powder. You could also refer to the original recipe and dip in low carb melted chocolate. If you want to add sweetness, you can use liquid stevia. When I do, I just add a few drops. But you can adjust to your taste. But I do better if I don’t sweeten these at all. I find the goat cheese and spices give me enough of a treat feeling without the compulsive edge.
