I’m probably the last person to actually try this but I threw together a Mock “Potato Salad” today and it was SOOOOO good! My daughter, the skeptic, even commented how good it was! I probably looked at 5 or 6 different recipes before jumping in and making it but ultimately just ended up making it exactly like I would have made a potato salad in another life except I used chopped up cauliflower instead of the taters. I’ll post a link of one of the recipes I looked at in case anyone is interested. Below is kinda how I did it. No measuring, just tossing things together! I used: *Small bag of fresh cauliflower florets chopped in small pieces & steamed for 5 minutes until soft (next time I’ll make a bigger batch!) *Celery *Green onions *HB eggs *Chopped dill pickles *Dressing was mustard, mayo, sour cream, salt, pepper, onion powder *Would have sprinkled paprika on top but my daughter didn’t have any so 🤷♀️ Saw this tip on a comment in one of the recipes: After you steam the cauliflower let it cool in a paper towel lined bowl in the fridge so it will dry out a bit before you put the salad together.
