#thriveinjuly My continuing saga in shopping my freezers, fridges & pantry for meal prepping! -We polished off a baggie of already cooked AND LABELED @Carrie E. chicken thighs plus 2 pkgs of True Story roasted chicken lunch meat. -Pulled out a pkg of Applegate hot dogs & 2 containers of chili from the freezer soooo CHILI DOGS for the win! Sautéed up some frozen cauli rice w/chili-ish spices. 👍👍 Last night was using up a bag of halved, prepped & frozen bell peppers and the ground beef/ground lamb mixture I prepped a couple of days ago. Added some frozen chopped spinach, an 8oz block of frozen cream cheese and maybe 1/4 cup of Parmesan cheese to the meat mixture. Filled the pepper halves (they were still frozen,) added a little more Parmesan (you can see that I used 2 different brands of Parm) on top and baked them for maybe 40 min. Until they were bubbly. Peppers were perfect (to me) and quite the hit for dinner here! Pictured (photography is not my forte) are the leftovers so we’ll get a 2nd meal out of it! 👍👍👍 Working it! Lol…🤦‍♀️
