#ThriveinJuly week2 Food prep and shopping? We did our big monthly shopping last week, at Costco. To supplement that, we get additional vegetables once a week or every other week from a local CSA. We buy eggs from Costco 6-8 dozen at a time (and supplement from a smaller closer store if we run out), bacon 4# at a time, etc. We divide up any large packages of meat into meal-sized portions and freeze them. Take one out in the morning for that evening. Usually, we just have simple food that doesn’t take much prep, eggs and bacon in the morning (I also have a side of kimchi or kraut, both also from Costco), and especially in the summer, some form of grilled meat/poultry/fish, a raw mixed salad, and maybe some grilled veggies. Other than that, food prep for me involves making sure we have on hand some low carb snacks for me (and daughter when she visits) for when my husband brings out the chips. That includes boiled eggs, pickles, olives, giardiniera mix, seaweed- those are the best snacks because they don’t add too many calories. I also like having around some dried sausage or salami, cheddar cheese, pork rinds, nuts, but sometimes eat too much of these, especially the pork rinds. I prefer Brazil nuts over others because just a few will satisfy me, but Costco hasn’t had them lately. If we have pistachios around, I eat too many and they aren’t the lowest in carbs. Anyway, that’s my food/snack prep. Usually we only go out to eat when we visit our daughter, we don’t really socialize so don’t have the temptations associated with that, we are currently hermits and our only neighbors are not people.
