#mealprep — Following @Carol in her quest to use her on-hand foods, I accept the challenge! ✔️ I made my very first homemade mayo. Not sure why I waited so long, because it is de-fricking-lish!! Made it olive oil based, with fresh oregano from my Aerogarden, lemon from my freezer, and whey leftover from making yogurt. I’ll post the recipe video on the Recipe Message Board. Written recipe is on the video’s description. ✔️ Made mint/dill dressing using the homemade yogurt from last week, lemon from the freezer, tahini in the pantry, fresh mint from my plant out front. No fresh dill, so I used dried dill weed from the pantry. Recipe will be on the Recipe Message Board. Perfect for shawarma salad or just any salad. ✔️ Trimmed my herbs out front. Rosemary and lemon thyme is currently marinating the chicken for healthier chicken parm freezer meals. The excess mint (after the dressing) was made into a fresh iced tea. ✔️ Parm Regg shredded and ready for healthier chicken parm and meatballs. ✔️ Primal Kitchen posted a recipe for dill pickle chicken salad. I changed it up and used tuna from the pantry instead (using the homemade mayo) and, of course, a little kiss of cayenne. I also added hardboiled eggs for super orb powers. 🦸♀️💥
