I'm in the midst of a slight obsession with shredded chicken. We had some leftover from the last batch I made and we decided to experiment a little. I did a take on Alice Springs Chicken and it turned out quite well (and pretty delicious.) I sauted mini bella mushrooms in butter and chicken grilling spices. I put a layer of mushrooms on the chicken, drizzled G. Hughes honey mustard on the mushrooms, and then topped it off with bacon and 4 state cheddar cheese. The honey mustard bakes into the chicken and makes it all pop. It is a great combination of flavors. I don't think this picture does it justice.
