In the mini meeting on Wednesday I talked about my little dwarf nectarine tree trying to do me in this year by producing a metric TON of fruit! I gave away bags of them to neighbors & friends, ate TWO (with cottage cheese both times) & turned the rest into a sauce for yogurt or ice cream or whatever the non-low carbers around here wanna do with it! I just couldn’t let myself waste all that fruit! Pretty proud of myself for not 1 little tester taste or not 1 lick of my fingers from the drips when I put it in the jars! It’s the small victories sometimes! ☺️🙃 Editing to add: This sauce is 3 ingredients only. NO sugar added! Nectarines are probably not really keto BUT a small amount could be incorporated as a very occasional treat…maybe…. 🤷‍♀️ 1) Metric TON of nectarines, pitted & chopped up in larger chunks (peels left on) 2) Juice of half of a large lemon. 3) 2 Tablespoons of water Cook nectarine chunks in a large pan (a metric TON requires a large pan) on low, used a potato masher to smash the chunks some & then my immersion blender to smooth it out and blend in the skins. Cook it on low to allow for thickening. Store in freezer. Use up within a few days when sauce is in fridge. Enjoy!
