I used to make my own granola all of the time and used on my Greek yogurt with berries. I've kind of missed that crunch. I've added just almonds or walnuts but it was still missing something. This morning I'm playing around with an oat-free coconut/seed/almond granola. I think I need to add a little egg white to bind it a little more. But the toasted coconut and the crunch of the seeds is good. I used a little Lakanto maple and cinnamon monkfruit syrup and am super happy with the flavor and crunch. I could only find shredded coconut unsweetened, flakes would have been better but all I could find was sweetened. Do anyone have a favorite granola alternative recipe?
