#mealprep “To the Freezer Tuesday” Yesterday’s adventure: Smoked 76 of the Tuesday Zoom meatballs (grain/sugar free) and smoked 10 bacon-wrapped chicken breasts. (The meatballs looked glazed in the photo, but that is the smoke glow.) A quadruple batch of the meatball recipe netted 76 using a #24 size disher. After I mixed the ingredients, I let the mixture rest in the fridge to firm back up while I worked on egg bites. After about an hour, the disher made portioning the meat pretty dang easy. Also, my husband tipped me off to using the cooling racks to portion the meatballs on and then transferring those racks directly to the smoker. Made it super easy! Speaking of my husband ❤️, he bought me a 4-probe Bluetooth thermometer. My inner food safety nerd is highly satisfied! I am so proud of myself for learning how to use the smoker!
