Instant Pot - Chicken Thigh Shawarma Meat https://pressureluckcooking.com/instant-pot-chicken-shawarma/ I’ll batch cook this using the 6lb bag of boneless thighs from Costco in my 8 quart Instant Pot for freezer meals. I’ll eat it with a little Greek yogurt or sometimes over a bed of greens with a yogurt dill sauce. Over cauliflower rice is another option (save the excess sauce to pour over). Adjustments: - I don’t trim the fat from the thighs. I just slice up the boneless, skinless thighs as they are. - He adds the seasoning into the pot. I have found that if I coat the pieces in a large bowl ahead of time, I am less likely to get a burn notice. (I wear a foodservice glove so the turmeric doesn’t stain my nails.) I make the spice mixture ahead of time and then sprinkle, toss, sprinkle, toss. - Chicken broth works just fine. I’ve also made it with only butter and no olive oil and it works just fine. - After it is done cooking, I’ll spread it out on a baking sheet (with the majority of the sauce from the pot) and pop it under the broiler until the chicken has a nice brown to it. Depending on your broil setting, but I usually go 8 minutes, flip, 8 minutes, flip, 8 minutes. My husband absolutely loves this.
