Easy o Peasy Tomato Sauce from Chef Michael Symon: - 28 oz can of whole, crushed, diced, etc., tomatoes (I have used all varieties/cuts… the $1.49 can works as well as the $4.99 can of fancies.) - 6 TBSP olive oil - 10 fresh basil leaves (use those stems, too!) - 3 garlic gloves (or minced 🤪) - Salt, pepper, crushed red pepper if you are feeling it (all to taste … will depend on the tomatoes used … canned tomato flavors vary so much). Whirl it all in the blender or food processor. Dump it into a pan and cook it on the stove on med-low until it starts to bubble, adjusting seasoning as needed. (Keep an eye on it … tomato bubbles are naughty and can make a mess.) Done! Freezes and thaws nicely. I use this for sauce on protein pizza crust or Healthier Chicken Parmesan, etc., Easy peasy, humble, but lots of flavor. If you do not have fresh basil, use dry (adjust as needed). No dry basil? Use dry Italian Seasoning. Basil in the tube also works.
