#mealprep in full swing today. Inspired by @gabriella.scavella and her egg bake yesterday! Cannot thank you enough, Gabriella! Was super easy and clean-up was a breeze. I doubled her recipe and used a large casserole dish, greased with bacon fat. I cleaned out the fridge and used cooked, spicy ground sausage and chopped, cooked bacon as the filling. Tossed in a few handfuls of the random shredded cheese. Used one cup of heavy cream and one cup of sour cream thinned out with leftover whey. Pepper and cayenne because spice is my life. (Waited to salt it until it was done, because the bacon and sausage were pretty salty. I don’t mind salt, but I did not want to ruin it.) Mine baked for one hour, but I turned off the oven (left the bake inside) for the last 10 minutes. Let it rest on the counter for about 15 minutes to let it finish setting. Topped with home-canned salsa. Eggsellant!!!
