#springforward Chicken “Rice” Bowl 4 Air-fried chicken thighs, salt, pepper and paprika or a rotisserie chicken 1frozen bag cauliflower rice Cilantro chopped (if you like) Juice of 1 lime Chili powder Ground cumin Cayenne pepper to taste EVOO Take EVOO and go once around the pan out on medium high heat. Add the frozen cauliflower and let cook about 10 minutes add juice of 1 lime and let cook another 5 minutes salt and pepper to taste. In another pan on medium heat cut or pull chicken from bones (save the bones in the freezer for bone broth) take EVOO and go once around pan add chicken and stir add cumin, chili powder, and dash of cayenne. Heat through about 5-7 minutes. Take a bowl put rice on bottom of bowl, add some chicken, top with your favorites salsa, cheese, sour cream, avocado etc.
