Taking a few minutes to introduce myself and babble a bit. I'm Teri. My pronouns are whatever you want. I live just outside of Dallas, TX. I'm single currently and live with my cat and bearded dragon. I started this journey for a lot of reasons. I want to be healthier and have a lot of chronic illnesses that would be better controlled if I lost weight. I currently have 3 hernias that a surgeon won't touch until my BMI is under 35. And most importantly I refuse to go under the knife just to lose weight. So, this last week I had to go on a business trip to California. And I'm notorious for eating carbs when I travel. I had my first meeting with Alice before I left and she gave me what I needed to keep in mind for my carbs. That really helped me to understand what I can and can't do. Breakfasts are usually easy for me. Eggs and bacon, maybe a strawberry or 2 if the hotel has any. Lunch I was really proud of myself I stuck to a salmon superfood salad that was very tasty both days. The first day I had flown in and it was really late when I finally got food. I didn't get any of the snacks on the flight because they were carb city. I ate ham meat and swiss cheese that first night. It was late so at that point I was just proud I didn't go with fast food. The second and third days' dinners were a problem. Nothing on the menu didn't have carbs. I made the decision to do my best to eat minimal carbs and I had 2 glasses of wine on night 1 as it was a going away party for some of my co-workers. I'm lucky if I drink 1-2 drinks in a month. The last day was a bit of a crap shoot. I missed breakfast due to I woke up late and had meetings. Had to rush to the airport and was starving by the time I'd gotten there so I just grabbed and went. No, they weren't good choices and I knew they weren't. When I got home I did have a nice chicken salad for dinner with parm "crutons". Was I absolutely perfect? No. I did make a real effort as much as possible with the exception of Friday to either stay in keto or minimize my carbs as much as possible. Yes. I had 3 sugar spikes on Friday which isn't surprising. The good part? I'm down 2kg as of today. That may be water weight, but I'll take the success. I'm proud of myself for making the effort. Tonight I'm having an Italian bake. Salami (because I'm not a fan of pepperoni), Italian sausage and mozzarella layered in a casserole dish and baked at 350 for 30 minutes. Pretty tasty!
