I've been going to the Cleveland area frequently for work this year. I discovered a local chain of eateries called The Basement Sportsbar that has Burnt Cheese Foldovers on their menu. For lunch today, I made my version of this deliciousness. It is pretty simple. Layout a few slices of thin-sliced provolone cheese in a non-stick pan, add whatever you want to one side, and then flip the other side over when the cheese gets brown. I stuffed mine with bacon, sausage crumbles, and pepperoni. I topped the meat with a nice dollop of Rao's pizza sauce before I folded the cheese over. I find these to be very delicious. The presentation could have been better with this particular one. I didn't stick the dismount and lost the symmetry I was shooting for.
