Tried something new for meal prep this week! I don’t generally like chicken so I make a lot of beef and turkey recipes but somehow the image of creamy chicken thighs with mushrooms got planted into my brain, so here we go! I checked a few recipes online and mostly ended up with the Diet Doctor version, using cheddar instead of Parmesan and adding spinach. It turned out SO CRAZY GOOD!! this is definitely not something that will still be in the fridge at the end of the week. I only made one recipe today because the freezer is overflowing with past meal prep leftovers. For my fellow keto-ers who are not superstars in the kitchen, I strongly encourage you to try this!!
