Another cold morning and this time I had cauliflower so it was time to give cauliflower oatmeal a try! Found a few recipes online with added coconut milk or almond milk but I don’t have either of those, so I used heavy cream with water. Also added Lakanto monk fruit, cinnamon, and butter, then added a pinch of salt which seemed to help kill the remaining cauliflower flavor. Not something I would eat every day by any means, but I never ate oatmeal that often either. But it definitely scratched the “I need something warm and a little sweet on a cold morning” itch! I recommend it to anyone who gets an occasional hankering for oatmeal! But probably not for true oatmeal lovers, LOL.
