#newme23 Week 3 Post 4: Share a favorite recipe in the chat. “Healthier Chicken Parm” is one of my favorites and it freezes and thaws nicely. I’ll use both of my Dutch ovens and cook up 8 or so portions at a time and freeze for quick meals later. The fresh herbs truly are the star of the show and I don’t miss the traditional breading, as it is super flavorful. I have used dried herbs and it works just fine, too (be sure to smash up the dried rosemary a bit or it might seem like you are gnawing on twigs). Your cook times will be different, depending on the size of the meat. To keep the cook times even, I’ll pound the breasts out until they are all about the same thickness. I temp the chicken and am looking for 165°F out of the oven. Sometimes it takes 8 minutes, sometimes it takes 16. The chicken recipe is from Giada De Laurentiis and the sauce is from Michael Symon. For the sauce, I toss everything in the blender, whirl it around until the basil is itty bitty, and done. Easy peasy.
