Week 3-2 #NewMe23 **UPDATE** Holy moly goodness gracious!! This shepherd’s pie was SOOOO good! I only managed to save a small container of leftovers for tomorrow’s lunch for ME. Guess that means they liked it! 😳 I made Shepherd’s Pie today using ground lamb as the protein. I’ve got a 2-fer here. 1) I’ve never made Shepherd’s Pie and 2) I’ve never actually cooked a dish using lamb. I’ve had it in restaurants but just never cooked it myself. It looks & smells wonderful and the best part is…there will be enough leftovers for at least another dinner! That’s a WIN in my book! Week 3-6 #NewMe23 I made a big pot of goulash soup today that should make my life easier for at least a couple of days! I’ve never made this recipe before but turns out it was pretty simple & delish! https://kalynskitchen.com/goulash-soup-with-red-peppers-and/?fbclid=IwAR3QEX4WFMnQb_Gw0GfBtLXi2JqIIfrUU55AuHdHaB3XE53cjGF_iwehieI&mibextid=Zxz2cZ (I roasted a couple of red bells under the broiler rather than the jarred ones & skipped the bouillon.) I also prepped a shepherd’s pie for tomorrow or later this week, cauliflower mash for the top also made and now I just need to plop that mash on top & bake! I’ve never made shepherd’s pie either but it looks yummy so far. Both dishes should provide plenty of leftovers so I’ll be able to relax and enjoy something outside of the kitchen! https://alldayidreamaboutfood.com/cheesy-cauliflower-shepherds-pie/?fbclid=IwAR2FbnngAtDGSp36TZIvbsDcrvq6rZI17EM7m_N1HNYa2dHo6jPrLNP6XR4&mibextid=Zxz2cZ (I left out the red wine, glucomannan & used a mix of thyme, oregano & rosemary rather than all rosemary.) I also made the usual stuff, hb eggs, ranch dip, cooked some bacon but my favorite batch cooking episodes involve new recipes….especially when they’re successful! 😂
