My meal prep usually consists of one big braised or roasted meaty dish! This week was what I call “slow beef” and it couldn’t be simpler. I cut up 3-6lbs if chuck roast, put in Dutch oven, add some aromatics, partway cover with broth, add salt and peppercorns, cover with lid, cook at 325F for 4 hrs or 350F for 3hrs, all depends on what I have going on and how much is in there. I use this all week in tacos for my family or I just eat in a bowl, sometimes I season with extra spices, sometimes I add cheese, sometimes I eat over a salad, whatever we feel like.
