Week 3 #'s 2 & 4. I tried a new recipe. Keto creamy lemon spinach chicken soup. It's a new favorite and I don't care for soup. 6 c baby spinach 12 oz boneless, cooked chicken breast (I used a cooked rotisserie chicken from the grocery) 6 c. Chicken broth, bouillon or consomme 1/3 c. Heavy creM 3 T fresh lemon juice 1. Finely dice the spinach, & dice or shred the chicken. Add both & broth to a heavy pot. Heat over medium high heat until boiling and spinach wilted. 2. Add cream & continue to heat for another 3 minutes 3. Remove from heat, season with lemon juice, salt & freshly ground black pepper. #newme23
