8 lb roast. 2 sticks soften salted butter 1 tsp. Course grnd pepper 2 tsp herbs de province (you can make your own) Course salt of some sort. Mix butter and spices except salt. Make nice batter spread over roast. Then salt a lot. Cover without sparing. Put in open roasting pan. Put pan in preheated oven temp 450. Time: 5 minutes per lb Mine is 8.33 lbs x 5 minutes =41.65 minutes When time is up. Shut off oven. Don't open door. Leave oven closed for 2 hours don't open ever. Till two hours are up. Then check internal temp. Should be 135. To 145 That's med rare. You're done. No need to rest it's been resting two hours
