Does anyone have a tried and true keto snickerdoodle recipe? A Christmas tradition is that we bake snickerdoodles while decorating the tree and my daughter and I are doing this tonight. I have a couple packages of Rosette's No-Sugar-Cookie mixes so thought of maybe just adding cinnamon, but not sure if that would be as close (maybe? Has anyone done that?). I found a few online that look promising (though I don't have the collagen for what looked like the best and the recipe said that the collagen powder is what provides the normal chewey texture.) I'm hoping to use stuff on hand. I've got almond and coconut flour and the usual suspects, but not collagen powder. Anyone have a tried/tested keto snickerdoodle recipe that they love?
