Any other meal preppers out there? I know that if I don’t cook for the week on Sunday, I will make poor impulsive food decisions all week, which is what happened last week! Back on track this week with hard boiled eggs, steaks and steak fingers, chicken thighs with mushrooms which were leftover from my attempt to create a chicken broccoli cauliflower rice casserole. As always, I Frankenstein-ed it from reading recipes online, and it’s ok, but missing something. But that’s ok, food doesn’t always have to be wonderful, sometimes good enough is best to keep me eating just enough and not too much. Hope you all are ready to start another week with good food!
