Sunday meal prep included the usual burgers, eggs, sausage and a new side dish! Keto cauliflower bake, sort of a baked potato casserole type thing. As usual, I looked up a bunch of “keto cauliflower bake” recipes online, got the general idea, then Frankenstein-ed my own version because I don’t like cream cheese or sour cream. One recipe offered ranch dressing as a swap so I tried that, plus maybe 1/4c heavy cream and it worked! It’s a little soupy but thickened up as it cooled. And it tastes great! This opinion comes to you from a slow-to-warm-to-cauliflower gal. Also, a few recipes recommended roasting the cauliflower rather than steaming for better flavor and I do think it had very nice flavor. Highly recommend… let’s see how it holds up over a week!
