I was in the mood for hashbrowns and eggs, and had some steamed spaghetti squash leftover from spaghetti this week. I browned the spaghetti squash in some butter with green onions, garlic, salt and pepper. I stirred in a bit of hemp seed for texture and the nutty flavor. Topped with the eggs this turned out to be a great substitute for "real" (potato) hash browns. This was REALLY close to a potato hashbrown...totally satisfied that desired flavor/texture.
