I can make it through a social gathering with verboten foods without a problem. But then I get home and the next day that's when the cravings hit. So I was super excited about the idea of low carb pumpkin pancakes, because they hit all of the Autumn food notes fairly safely. Here's a picture and my recipe is simply as follows. Beat four eggs. Whisk in one quarter cup of canned pumpkin puree and one tablespoon coconut flour. When well blended, add some cinnamon and sweetener if you want some. Cook the way you usually cook pancakes, on a Hot grill. You can freeze leftover pumpkin puree for some other time.
