Both my mom and grandmother may be rolling in their grave at this, but they both succumbed to diabetes, so I KNOW this is better. Actually, it was a pretty good substitution for biscuits and gravy. It satisfied the desire for biscuits & gravy breakfast for dinner. Sure, we added onions and peppers, (sacrilege?) and the gravy was made with almond and lupin flour, heavy cream instead of milk. Instead of biscuits I had mine on top of a Fox Hill Kitchens grain free bagel.. (yeah, yeah, what southerner uses a bagel for biscuits and gravy? Really...it was good. π)
