For fellow Laitram and/or Louisiana folks...we made gumbo this week using Skinny Roux (from a jar). The ingredients are just avocado oil and almond flour. The jar was $10 and shipping for 1 to 3 jars is $10 (so I bought 3 to maximize the value of each jar including shipping cost.) It only took half a jar for a huge pot of gumbo. The flavor hits it though didn't really flesh out until the andouille and okra were added, we were a little unsure about the flavor until then. The nutty toasted flavor of a dark roux is my preference and this got the pot of gumbo there. It did not handle the thickening you get with traditional roux but some extra okra and a little xanthum gum added and this gumbo passes just fine. The kids didn't even know the difference. (And yes, we are having gumbo this week despite 102 heat index still at 11pm last night...it goes against what feels natural to me. It is a "fall/winter food" but when your 13 year old requests it....she gets gumbo.)
