Results from Yesterday's Smoking During Work. The last 10 degrees fought me hard, and i never actually got a reading above 195... but the temp probe literally slide straight through the meat with no resistance, and VOILA it was so soft I did the entire Pull of the Pork with just my bare hands in gloves. Food prep is done for the week.
