Morning Check In: yesterday was interesting! After dinner we rode our bikes to a friend’s house for a dessert get-together. The dessert was homemade ice cream - very few ingredients. I had two scoops. I am interested to see that my blood sugar response was pretty low (it went up to 112 at the highest), but it also stayed “high” for about 3 hours, and then all night was just a little bit higher than it usually is. Plus there is more variability. This is what was happening inside: blood sugar went up, insulin went up in tandem. Cells that needed fuel were topped up and then became insulin resistant to protect themselves from glucose overload. The extra glucose in the blood stream wandered around while the liver was madly trying to turn it into triglycerides and store it as fat. That process took many hours. I was busy! I really enjoyed the ice cream, but I also recognize the burden I placed on myself. I won’t do that too often! But I also won’t do it never. 🙂 Today two meals. Protein for lunch. Yard work for exercise!
