I had been making crepes to contain the main entry in the meal’s menu. Yet, since being a vegetarian I needed to find ways to increase my protein. I am on low carb approximately 40-50 carbs a day, no grains of any sort, so not keto as a lot of you guys are on. I got my hand mixer and blended 2 tbs of garbanzo flour with 3 eggs along with some seasonings and made a crepe that did not break at the fold. Chopped up some red chile, sautéed onions with 1/4 cup of red beans (in freezer since I started the ketogenic diet). I would have cooked some tempeh and crumbled them instead of beans but had not grocery shopped. I then placed some plant based sour cream.
