I saw a professional chef talk about the best way to roast veggies in the oven. Toss them vegetables in oil & spices. Put ‘em on a sheet pan, put that sheet pan on the very bottom of your oven & watch them sizzle! 20 minutes @ 425°, pull ‘em out & sprinkle Parmesan cheese on top. Back in for 5 more minutes & enjoy!
