Sheet pan lined with parchment paper. 🥦 Broccoli sprayed with avocado oil đź§‚ Sprinkled with salt, pepper, garlic & onion powder 🌶 A dash of tajĂn for a little kick Then the good stuff… 🍚 Riced cauliflower 🍅 Rotel diced tomatoes & green chiles 🍗 Shredded precooked chicken đź§€ A generous layer of Mexican cheese Into the oven for about 30 minutes… and what came out was pure comfort food goodness. Cheesy. A little spicy. Packed with flavor. And the best part… real food that’s low-carb and actually fills you up. No complicated recipes. No ultra-processed junk. Just simple ingredients doing their thing. Sometimes the best meals are the ones you don’t overthink.
