It’s Sunday. Sunday is my most challenging food day of the week. This is the day that I cook for my two remaining elders, my Mom and her sister, ages 88 and 95. I also care for a 4 year old autistic child on Sundays. Today’s dinner will be chicken tenderloin with noodles and Alfredo sauce and a side of broccoli. My elders will beg for something sweet, however, I ignore the pleas. No sweets. Today is the day that I fight carbs more than any day of the week. I will eat a big keto breakfast and have spaghetti squash instead of pasta. I normally make it thru the day until around 5pm when my 4 year old nonverbal great nephew begins to melt down as he tires. He will fight sleep. He will fight me and the rest of the family and nothing will soothe him until we get in the car and drive and he sleeps. I look forward to Sundays because it’s a blessing to be with family. We never know who will show up at Mom’s but it’s always a blessing when someone stops by. Returning home to an empty apartment is my final eating challenge. It’s always a relief to come home and relax but that’s when I am tempted to eat eat eat eat. So yesterday I restocked my Fairlife supply and I will have precooked keto food in the fridge. I plan to run hard from the food demons this evening! Enjoy your Sunday!
